Food Dump: Week 14 & 15

The weather and my mood have been improving so much these past two weeks! More time outside, fun with friends, and good food make my heart so happy.

Date Night

Speaking of making my heart happy… Jackson and I celebrated 5 (!!!) years together during week 14! The place we went had been recommended to us because of their seafood and classic American-fancy dinner options. It was delicious! I wanted to try everything on the menu, but I settled with the filet mignon and a crab cake. It came with the house salad as well, but I demolished it before I thought to take a picture. Whoops.

Quick Visit Home

I was visiting my parents for a couple days last week, and I try to make a point to stop by the local coffee shop while I’m there. They have great coffee and even better breakfast sandwiches. You simply can’t go wrong with a BEC on an everything bagel.

Sausage & Peppers

I don’t know what overcame me but I had a deep craving for sausage and peppers (and onions). So I took it upon my self to fulfil it to the best of my ability. I tried an all-beef, smoked kielbasa for this recipe and I didn’t love it. I think all-beef has the tendency to be too rich. I would make this again but with a pork or mixed brat.

I seared the sausages, then removed and sauteed sliced onions and peppers until soft / the onions started to caramelize. Next added in garlic and tomato paste. After a couple minutes of sautéing, I added in crushed tomatoes and Italian seasonings. Added the sausages back in, covered and let simmer for 10 (maybe?) minutes. The fries are Alexia’s (frozen) Seasoned Waffle Cut!

Chorizo Breakfast Tacos

I love chorizo. I love eggs. I love joy. Therefore; breakfast tacos.

So simple and so flavorful. Cook the chorizo, scramble some eggs, mix some hot sauce in sour cream, top with cilantro and lime, profit.

I have nothing else to say besides 10/10 highly recommend.

Chicken Cutlets

Chicken cutlets are the new It Girl. They are the song of the summer.
I have never made them before but I was shocked at how easy to make and delicious they were. I followed @cassyeungmoney‘s instructions. Thinly sliced chicken breast (I had two), egg, seasoned breadcrumbs, shallow fry.

I prepped rotini with Rao’s Arrabbiata sauce, a simple spinach and arugula salad, and roasted asparagus to go with. Jackson asked to add this to the usual rotation it was such a hit!

House Salad (ft. chicken cutlet)

Holy shit. My last house salad was delicious but this one had me thinking I was a genius for throwing things on a plate. The only thing I wish I had to add was either grilled corn and/or grilled zucchini.

  • Arugula and spinach bed
  • Oven-refreshed chicken cutlet leftovers
  • Baby tomatoes (cut in half always)
  • Sliced pepperoncinis
  • Pine nuts
  • Cilantro
  • Pecorino Romano
  • Red pepper flakes, salt and pepper, pesto olive oil, red wine vinegar

We’re hitting the time of year where I’m either working or out of town. We’ll see how consistent I can be this summer. I’m also hoping to have some guest writers feature this summer to help add content and bring them some creative joy.
