Tuscan Lentil Soup

I’m shocked I’ve gone 18 weeks into the year without making this soup. This is my go-to people pleaser. It’s so flavorful for only having a 35 minute simmer time.

I typically use hot sausage in this, and instead of cherry tomatoes I usually use a can of diced fire roasted tomatoes. I have switched out the chicken broth for veggie on several occasions. It is absolutely salty enough between the sausage and broth – I do recommend using the low sodium broth.

Crockpot Chicken Fajitas & Arroz Rojo

I love mexican food – but only the rice would really qualify from this recipe. The crockpot chicken was chicken breasts, onion, and peppers with lots of chili powder, garlic powder, mexican oregano, cumin, chipotles in adobo, and cerveza. The chicken always shreds super easy and is super moist. The refried beans are heated up from a can – my fave. I love making quesadillas with leftover beans the next day too.

The rice is from a mishmash of people sharing their abuelita’s recipes online. Starts with toasting the rice, then adding in diced onion and garlic. While that fries, I juiced a couple of roma tomatoes. You add in chicken bouillon (I used veggie this round for our vegan friend) cube and toast that with it. Lastly you add in the tomato liquid and about 2 cups of water. Mix well and cover. The best part of the rice is the active time off – you just let it sit and cook for 20 minutes. I like to add in peas and carrots with the tomato and water.

The Tuna Freak

This thick snack of a sandwich came to me in a day dream. Smokey tuna, crunchy veg, soft-pillowy bread. Highly recommend eating this when you want to feel like a million dollars.

1/2 pouch of smoked tuna. 1/2 pouch of regular tuna. Diced cucumber. Diced shredded carrots. Avocado half. Finely diced fist-full of cilantro. Finely diced shallot. Dollop of mayo. Lemon juice. Salt, pep and cayenne.

Slap it on some lightly (not even visibly!!) toasted white bread. Profit.

Family Pilgrimage

My family has a tradition of visiting Frankenmuth, Michigan at least once a year. Some culinary highlights are Zehnder’s family style chicken dinner (featuring liver pâté), Prost! wine bar, and my beloved; over- priced, giant pretzel.

I’m so glad we could get caught up. Get excited, birthday festivities start this week!! And you KNOW I’ll be eating good.
